When do you pick lime from a tree?

We are from California where there are 4 seperate seasons. We now live in the south (Southeast Georgia) where one seasons is similar to the next and fruit grows on the tree year round. How do you tell when the limes are ripe and ready to pick? Please help…..Thank you

Most limes (and, all citrus, for that matter) can be allowed to mature on the tree until you need it.

When to pick limes is largely a matter of taste. The small Mexican limes are probably best picked before the start to turn yellow. Some like to let them mature a little more, however, to get rid of some of the bitter taste. Others like the bitter taste of the dark, green lime. This type of lime is the one you are most likely to see at bars and used in tropical drinks.

Berss limes should be left on the tree a little longer, in my opinion, until the have a blush of yellow around the stem. They make great limeade and are really good squired on Mexican dishes.

Limes should do very well in GA, especially along the coast. They’re hardy inland as long as the temperatures are not too cold and they don’t suffer any hard freezes during the first few years. Once established, they can take a little winter cold with no damage. The hotter the summers, the better.
